Mushroom (Pull Pork Style) Sandwiches

Ingredients

  • 1 lb King Oyster mushrooms
  • 3 TBSP extra virgin olive oil
  • 3/4 tsp paprika
  • 1/4 tsp sea salt
  • 1 tsp granulated garlic or 2 garlic cloves minced
  • 1/2 cup BBQ sauce
  • 2 vegan butter toasted gluten-free hamburger buns or any hamburger bun

Instructions

  • Preheat oven to 400 degrees °F or 204 °C.
  • Wipe mushrooms with a moist paper towel to remove any dirt and cut ends if desired.
  • Use a fork and shred mushrooms. Smash the top of the mushrooms with a fork. Place mushrooms on parchment lined baking sheet.
  • In a small bowl, add paprika, salt and garlic and mix together. Drizzle 2 tablespoons of olive oil oven shredded mushrooms and sprinkle seasoning over the top. Hand toss mushrooms to evenly distribute seasoning.
  • Place mushrooms in per-heated oven and bake for 25 minutes, or until mushrooms look dry and edges are brown.
  • Add 1 tablespoon of olive oil to a large fry pan over medium heat. Add baked mushrooms to pan, along with BBQ sauce. Stir and cook until mushrooms have caramelized on the edges. This step is very important. The caramelization will add tones of flavor and give the mushrooms that meaty texture. This will take about 10 -13mins and is well worth it.
  • Place cooked mushrooms on top of a butter toasted bun and you are ready to enjoy! I used a gluten-free bun, but you can use whatever hamburger bun you would like.

Notes

I made this recipe vegan and gluten-free, but you can easily use regular butter to toast a gluten hamburger bun and the results will be the same.
