Mouth Watering King Oyster Mushroom (Pull Pork Style) Sandwich

There are a variety of different kinds of mushrooms beyond the button mushrooms you find on pizzas. Unfortunately, a lot of people don’t know about the wonderful world of mushrooms and how great they can be for you. In this recipe, I use the King Oyster mushroom, also called the King Trumpet mushroom. King Oyster mushrooms, as well as many other types, are packed with vitamins and are low calorie. This pull pork style sandwich recipe was one of the first mushroom recipes that I tried. My husband loves this mushroom recipe and he used to only tolerate mushrooms on pizza! If you think you don’t like mushrooms, I would give this recipe a try and your taste buds will thank you!

How to make King Oyster Mushroom (Pull Pork Style) Sandwiches

I start by giving my mushrooms a quick wipe down to remove any dirt and I also cut the ends. Then, I shred the mushrooms with a fork and place them on a parchment lined sheet pan.

Once all shredded, I drizzle about two tablespoons of oil over the mushrooms and sprinkle granulated garlic, paprika and a little salt over the top. Next, I use my hands and toss it all together.

It will need to bake for about 25 minutes until it looks dry, not burnt, just dry.

Once cooked, I heat a large pan to medium heat and added a tablespoon of olive oil. Next, I add in the roasted mushrooms, as well as, about half a cup of BBQ sauce. I saute and stir the mushrooms for about 25 minutes or until caramelized. The key to this recipe is caramelization. It will make a world of difference. The caramelization of the King Oyster mushroom is what gives this recipe that meaty feeling.

After the mushrooms have caramelized nicely, turn off the heat and toast two buttered hamburger buns on a heated griddle or pan. We use vegan butter, but you can use regular butter too. We also use a gluten-free bun. But, any bun will do. Then assemble your burgers by adding the mushroom filling in the middle with a bun on top and enjoy!

Ingredients

  • 1 lb King Oyster mushrooms
  • 3 TBSP extra virgin olive oil
  • 3/4 tsp paprika
  • 1/4 tsp sea salt
  • 1 tsp granulated garlic or 2 garlic cloves minced
  • 1/2 cup BBQ sauce
  • 2 vegan butter toasted gluten-free hamburger buns or any hamburger bun

Instructions

  • Preheat oven to 400 degrees °F or 204 °C.
  • Wipe mushrooms with a moist paper towel to remove any dirt and cut ends if desired.
  • Use a fork and shred mushrooms. Smash the top of the mushrooms with a fork. Place mushrooms on parchment lined baking sheet.
  • In a small bowl, add paprika, salt and garlic and mix together. Drizzle 2 tablespoons of olive oil oven shredded mushrooms and sprinkle seasoning over the top. Hand toss mushrooms to evenly distribute seasoning.
  • Place mushrooms in per-heated oven and bake for 25 minutes, or until mushrooms look dry and edges are brown.
  • Add 1 tablespoon of olive oil to a large fry pan over medium heat. Add baked mushrooms to pan, along with BBQ sauce. Stir and cook until mushrooms have caramelized on the edges. This step is very important. The caramelization will add tones of flavor and give the mushrooms that meaty texture. This will take about 10 -13mins and is well worth it.
  • Place cooked mushrooms on top of a butter toasted bun and you are ready to enjoy! I used a gluten-free bun, but you can use whatever hamburger bun you would like.

Notes

I made this recipe vegan and gluten-free, but you can easily use regular butter to toast a gluten hamburger bun and the results will be the same.
